How were the fighters for ufc 1 - 4 selected?

I must be the last person in the world to find this out but I really didn't know that the Gracies started it to showcase bjj. So how did they pick opponents? And how does anyone know they didn't steer clear of wrestlers and judoka and other grapplers that might have been able to beet Royce?
